Here is a transcribed shrimp ceviche recipe from the Food & Wine Festival 2012 cookbook. Very good and naturally gluten & dairy free!
Truly can’t be called a ceviche, the shrimp is roasted. In a ceviche the acids from a citrus juice react with the protein and “cook” the protein. Had this same argument with a sous chef at Cinderellas Royale Table when I was a chef there. He was forced by the executive chef to change it from a ceviche to a seafood salad. Be true to classic recipes, if you can’t do that then change the name, don’t feed no culinary people the wrong procedures of cooking.
